Happy 4th of July!!

Wow, I knew I had been putting off posting for the majority of the summer...but April 13th?  I guess it has been much longer than I had realized.  I started a new position back in Apri and have been super busy.  Nonetheless I am going to make an effort to keep up with my posting-at least once a week.

So...with a vacation day under my belt I am relaxed and ready to get back down to business!
 
It's my official last day of vacation,  I have never been so sad to see a Friday come!  This morning started the same as yesterday's...lounging around in my jams and watching some Gossip Girl on Netflix.  I was feeling in a citrus-y mood and made myself a fruit bowl to start off the day.
I am off to tackle one of my favorite 'Strong Like Susan' workouts.  It is quick and great for your legs and butt.
 
Today was just the type of day I needed...full of relaxation!  My morning started off slowly, I laid in bed reading the Hunger Games until about 10:00am.  I finally coaxed myself out of bed and made myself something sweet for breakfast.  (I use 'made' lightly.)
After breakfast I laid around and took part in my favorite lazy day activity; watching old gossip girls episodes and catching up on some blogs.  (Not a very active morning, but boy did it feel good to sit around and have some quality 'me' time.)
I finally got the urge to do something active this evening, and talked Robby into playing some tennis.  It was a little cold out there, but it felt good to whack the ball around.  There is nothing like tennis to take out some stress and have a little fun.  I forgot to bring my camera to lunch today, to tennis this evening, and on our walk by the lake...but luckily I snapped this little number (not.)  Oh well tomorrow I will try to remember to bring my camera and actually document some of my meals.  At least I got a little practice with the mirror photo...had to cut off my head because I couldn't figure out where to look!  There is always tomorrow...
 
So fresh and so clean clean! My chompers are looking pretty good today, but I do have to go back for a filing in a couple weeks (d'oh!)
This is what dinner looked like last night:
Mexican night! Cilantro quinoa, tri-bean blend, homemade salsa, and homemade guacamole.

Last night after dinner, we headed off to L.A. Fitness to get a circuit workout in.  We tackled a 35 minute circuit workout that included 60 seconds of each of the following (30 second rests);
-jogging in place
-mountain climbers with the Bosu
-running on the bosu
-spider push ups with the Bosu
-jumping jacks
-skull crushers/ 1 dumbbell
-jumping rope
-curls using 2 dumbbells
-sit ups with the Bosu and a medicine ball (Bouncy side up, sit up-stand -raise the ball to the ceiling-repeat
-30 second plank
-ab work (feet off the ground, rotate side to side with a medicine ball
-jumping jacks
-alternating lunges using the Bosu and medicine ball (secure the Bosu against a wall)
-burpees with the Bosu (Hands on the flat side)
-jogging in place
-squats with a medicine ball
-jumping jacks
-reverse lunges using the bosu
-skull crushers/1 dumbbell
-30 second plank
-jumping jacks
-burpees with the Bosu
This workout was enough to get us both sweating!  After the circuit, we finished off the night with 20 minutes of spinning.  We finally got home around 9:00pm and spent the rest of  the night reading the Hunger Games Trilogy (me 2, Rob 3.)
 
Good morning! I am still thoroughly enjoying my week of vacation.  I woke up this morning with the need to do a little  dancing to Duffy-Mercy (mirror style.)

After my early morning (extreme) dance workout I made myself a little something something for breakfast.  I chopped up an apple, some strawberries, and added some Trader Joe's almond butter.  I tried dipping a strawberry in almond butter but that just wasn't happening, so I saved the rest for the apple boats. Mmm.

Now I am off to try Julie's "No Equipment Needed Cardio Circuit Workout" from http://www.pbfingers.com/ before hopping in the shower and taking off for the dentist (gulp.)  Perfect for today because I just couldn't see myself making it to the gym this morning.  I'll let you know how it goes this afternoon!

Anyone else get these images in their head before heading to the dentist?!  Wish me luck!
 
I have been putting off making tonight's dinner for days and have no idea why...it was delicious and pretty easy!  Tonight we had mussles in a basil tomato sauce with veggie ravioli and a side of brussel sprouts.  I used a box of Mussels and prepared some veggie ravioli seperately.

Tomato & Garlic Mussels (Keep frozen)
Add contents of bag to a medium saucepan.
Cook on high for 4 minutes.
Reduce heat to simmer, and cook an additional 4 minutes or until mussle shells are all open.
Once the ravioli is done, add to the mixture along with 1 fresh diced tomato. (
Cook for an additional 3 minutes)

Rising Moon Organics-Garlic & Roasted Veggies Ravioli

Bring water to a boil, reduce heat and add ravioli.
Boil on low for 8 minutes.
Strain ravioli from pot using a slotted spoon; add ravioli to the pan containing the mussels.

Side Dish: Roasted Brussel Sprouts
Preheat oven to 400 degrees F.
Throw 10 brussel sprouts into a ziploc bag, add a splash of olive oil, a pinch of kosher sea salt, and some pepper.
Shake until well coated, and pour onto a baking sheet.
Cook for 30 minutes, turning the brussel sprouts regularly.

Top the pasta dish with little pieces of fresh mozzerella cheese and enjoy!
 

What a gorgeous first day of vacation!  I just recently took a new job and start next week.  Friday was my last day with my olf company and I am ready for some rest and relaxation.  I am a little nervous about what this new position will entail, but I am exicted to move in a new career direction more closely related to my field of study.  In the meantime I plan on enjoying every last minute of this week off!
Today I slept in, read some of Cathching Fire (an Easter present from the BF) and made myself a sweet breakfast including oatmeal with coconut milk and a spoonful of Trader Joe's Cocoa Almond Spread.  If you haven't tried it yet, you have to!  It makes everything taste like a little dessert. :)

Breakfast Smoothie:
1 cup of Coconut milk
1/2 a frozen banana
3/4 cup of pineapple
1 large leaf of kale
splash of water

I love this smoothie!  I usually make my morning smoothie with an apple instead of pineapple, but this version tastes just like a pina colada.  (Might have to try it with a little rum before my vacation ends!) 
I'm off to scour the internet for an at home workout before heading out to hit the grocery store.

I have been "dog-sitting" all week for Sonny, the cutest Golden ever.  All afternoon we got a chance to go for a walk, play in the park, chase some ducks, smell EVERYTHING, and get some sun.
(Just noticed the 'No dogs allowed in park' sign that snuck into the picture...whoops)

First official "Sweat it out Saturday"
It is a beautiful day in Michigan, and I'm excited to get outside and break a sweat.  I tried to stop by L.A. fitness this morning to catch a Spinning class, but I may have been running a little behind (rolled out of bed 2min. before the class started) and didn't get a pass to the class.  Anyone else have to get passes to take classes these days?  I think out gym needs to add another Saturday morning class!  I was still able to get a great workout in that in included the following;
Treadmill Intervals:
Min 1-5, speed: 4.2, incline 7.0
Min 5-12, speed: 6.5, incline 0.o
Min 12-20, HIIT 30 seconds 10.0, followed by 15 seconds of rest
Min 20-22, cool down speed: 3.8

The HIIT intervals were killer today, I was beat after the first few.  After my treadmill workout I used my favorite piece of gym equipments, the Bosu, to complete a 30 minute circuit (I'll add the details soon to the fitness page.)

I'm off to eat this banging breakfast before getting outside to enjoy the sun!
